cornbread

I love cornbread, but it was coming out too dry and crumbly. So, I decided to master it, and came up with this moist, honey-kissed, almost cake-like version that uses a 1:3 cornmeal to flour ratio.

I think it's just perfect, though I'm not sure my Southern friends will agree ;-)

1 1/2 cups unbleached all purpose flour
2/3 cups sugar
1/2 cup cornmeal
1 T baking powder
1/2 t salt
1 1/4 cups milk
2 eggs
1/3 cup vegetable oil
3 T butter, melted
1 T honey

Combine the flour, sugar, cornmeal, baking powder, and salt in a large mixing bowl and set it aside.

In a small bowl, whisk together the milk, eggs, oil, butter, and honey. Add it to the dry ingredients and stir just until it's blended.

Bake it in a greased pie plate at 350 degrees for 35 minutes, or until a toothpick comes out clean.

Or bake it in four mini loaf pans...
just shorten the cooking time by 10 minutes or so :)

I am a southern girl and this does not sound so bad, I grew up in TX so I can fully understand the need and want to good cornbread, I like it a little on the sweet side, some like it what I call bland and not sweet at all. But the key to GREAT cornbread is truly a cast iron skillet or even pan. If you love cornbread then you have to make it in cast iron, it just does something to it that makes it soooo sooo good. I like mine a skillet but some like it in those pans that come out looking like corn cobs or other designs, if you try it you will never go back!!

Thanks, dimpledarlin', I'm going to try the cast iron skillet.

I've been making this 2 x/week, so I have plenty of opportunities :)

Just put some grease or oil (whatever you want) in the bottom of the skillet and put it in the oven to heat it up, when you pour your batter in it will look like all the all comes to the top but it will be ok just throw it back in the oven and let it brown on top and it will be the best you have ever eaten!!
