This is a categorized overview of all of my frugal and simple vegetarian recipes… and some vegan recipes, too!
My simple vegetarian recipes use mostly whole foods and emphasize frugality and simplicity, a result of Denmark’s high cost of living, my desire to live simply, and my limited kitchen space. My cooking is mostly inspired by foods I miss from home, foods I miss from my omnivore days, and things I’ve picked up in my travels.
I’ve been a vegetarian for more years than I haven’t, so all of my recipes are vegetarian and the ones with an asterisk are vegan or can be made vegan by swapping one ingredient. I hope you’ll love my simple vegetarian recipes enough to pin them :)
